Garlic Butter Chicken Meatballs
Ingredients:
For Meatballs:
- 1 Kg chicken Qeema (Chopped)
- ½ cup breadcrumbs
- 1 egg
- 3 garlic , minced
- 1 tbsp fresh parsley, chopped
- ½ tsp Italian seasoning
- Salt and pepper, to taste
- 1 tbsp olive oil (for frying)
For Garlic Butter Sauce:
- 4 tbsp unsalted butter
- 4 garlic cloves, minced
- 1 tsp fresh thyme, chopped
- ½ cup chicken broth
- 1 cup shredded mozzarella cheese
- 4 slices crusty bread (like sourdough or French bread)

Directions:
Make the Meatballs: In a large bowl, combine ground chicken, breadcrumbs, egg, minced garlic, parsley, Italian seasoning, salt, and pepper. Mix well and form into small meatballs (about 1 inch in diameter).
Heat olive oil in a skillet over medium heat. Fry the meatballs for 4-5 minutes, turning occasionally, until golden brown on all sides. Remove from the skillet and set aside.
Prepare the Garlic Butter Sauce: In the same skillet, melt the butter over medium heat. Add minced garlic and thyme, sautéing for 1-2 minutes until fragrant. Pour in the chicken broth and simmer for 2 minutes.
Assemble the Dish: Preheat oven to 375°F (190°C). Place the slices of crusty bread in a baking dish or ovenproof skillet. Arrange the browned meatballs on top of the bread, then pour the garlic butter sauce over everything. Sprinkle generously with shredded mozzarella.
Bake for 15-20 minutes, or until the cheese is melted and bubbly.
Garnish with fresh thyme and serve immediately, enjoying the cheesy goodness with crispy bread!
