Curry (کڑھی) Recipe


Ingredients:

  1.   One and a half cups of  Gram flour  ( besan ,بیسن)
  2.   One and a half or 2 cups of curd (دہی)
  3.   Spinach or potato or onion (پالک یا آلو یا پیاز) 100 grams
  4.   Salt (نمک) to taste
  5.  Six to eight cloves of garlic (لہسن کے جوئے)
  6.  Two onions(پیاز)
  7.  A tomato (ٹماٹر)
  8.  Proven hot spices one tablespoon (ثابت گرم مصالحہ)
  9.  Crushed Red Chilli (سی ہوئی لال مرچ) One teaspoon
  10.  Chopped Red Chilli (کٹی ہوئی لال مرچ) One teaspoon
  11.  A tablespoon of ground coriander(ثابت دھنیا)
  12.  A tablespoon of white cumin (سفید زیرہ)
  13.  Turmeric (ہلدی) one teaspoon
  14.  Proofed rye(musrud, ثابت رائی) half a teaspoon
  15.  Fenugreek seeds (میتھی دانہ) small half spoon
  16.  Nigella sativa (Kalonji, کلونجی) 1/4 grain
  17.  Four to six red chillies (ثابت لال مرچیں)
  18.  Cooking oil (کوکنگ آئل) as per requirement

Directions:


1). Sieve half a cup of gram flour and add half a teaspoon of turmeric and beaten curd to it and add three cups of water and mix well.
2). Fry the coriander and cumin seeds and coat them. Fry a finely chopped onion in three to four tablespoons of cooking oil until soft.
3). Then add crushed red chilies, a tablespoon of chopped coriander, cumin seeds and tomatoes and fry well.
4). When the oil separates, add the prepared curd mixture to it and cook on medium flame until it boils. Then keep it on low flame.
5). Wash and finely chop the spinach and now strain the leftover besan and add finely chopped onion, spinach or potato, salt, chopped red chilies, and turmeric and mix well. Add water and make a thick mixture. take
6). Heat the cooking oil and make pakoras from the gram flour mixture and when the curry thickens, add it.
7). Finally, add four to six tablespoons of hot spices to the cooking oil to make the baghar.

8). Then add finely chopped garlic, red chillies, rye, kalonji and fenugreek seeds and fry until golden and apply tempering(tadka) to the pan (kadhi). Add salt and keep it on low flame.

9). Enjoy this delicious curry with chapatis and steamed rice.
