Jalebi, Funnel cake


Ingredients:

  1.  1 cup flour 
  2.  1 tablespoon of gram flour 
  3.  1/4 teaspoon cardamom powder
  4.  1/4 pound teaspoon baking powder
  5.  Pinch of baking soda
  6.  3 tablespoons of curd
  7.  Yellow or Orange food coloring (optional)
  8.  Water as needed - about 1/2 cup + 2-3 tblsp
  9.  Oil or ghee for frying Funnel cake (jalebi)

Directions:


Mix the flour, gram flour, baking powder and baking soda in a large bowl, then add the yogurt and cardamom powder.
Add food coloring (if using) and water to mix well. Which is neither too thick nor too thin.
You may need 3/4 water as much as flour and gram flour.
Now cover the mixture and let it ferment for 10-12 hours. Now after 12 hours mix 
Mix a little. If the mixture seems too thick, add about 1 tablespoon of water.
Meanwhile, mix water and sugar in a pot and boil it to make syrup. Now add cardamom powder, saffron and lemon juice.
Let it boil until the syrup becomes sticky and forms a string.
Check the syrup with your thumb and forefinger. If the syrup sticks and forms a string, it means it is ready.
Keep the syrup warm while making the jalebis.
Now, to fry the jalebis, put the mixture in a bottle or a cone made of thick cloth 
Meanwhile, heat oil or ghee in a pan or (kadhai). 
Keep the stove on medium heat.
Slowly pour the mixture into the hot oil, taking care to rotate it by hand so that the jalebis form well.
Remember to keep the heat low, --  (And if the dough is spreading in the oil, the mixture is probably too thin and you need to add some flour.)
When the jalebis are fried, add them to the syrup.
After a while, remove the jalebis from the syrup and transfer them to a serving plate.
